a few days ago, heidi swanson posted a new recipe on her blog, 101 cookbooks, for her friend nikki's 'healthy cookies'...no eggs, no flour, no sugar. one might wonder how these could even be considered a cookie without those quintessential ingredients. well, i am here to tell you, they are cookies with a capital C. fred and i both have a knack for sweets, but not so much a knack for the love-handles that come as a result of devouring too many. so we compromise and eat them in minimal amounts...or opt for the more healthy choices. these were the latter. the main ingredients are oats, mashed banana, unsweetened coconut and chunks of rich chocolate. mixed with a few other ingredients (vanilla, coconut oil, baking powder, cinnamon, salt), then baked in the oven for about 13 minutes...they came out beautifully. i tried one before fred to make sure they didn't taste like poop. and for the record, they didn't. fred just arrived home today from his first game of the season in lleida. unfortunately, their team lost. fred, being the optimist that he is, feels alright about it and simply hopes for a win next weekend. thata boy! but a plate of 'welcome home cookies' couldn't hurt nonetheless.
