last week i was at a loss as to what to make for lunch. so i did what i usually do and just opened the cupboards and stared at things for a while. it didn't take long before things started to come together in my head. i got the bulgur going on the stove and tossed in a bouliion cube for flavor. in a medium-sized bowl i mixed together 2 small cans of tuna, 1 small can of sliced mushrooms, 1 small jar of roasted red peppers (chopped) and 1 about 2 handfuls of pitted green olives (chopped). when the bulgur was finished cooking, i let it sit for a few minutes and then tossed it in with the vegetable and tuna mixture. the olives, peppers and bouillon provide plenty of salt, but add more if you desire. just before serving i drizzled some balsamic vinegar over it all and gave it one more toss. i rarely give my own dishes rave reviews, but this was delicious! fred went bananas over it. well, it just so happened that i stocked up on the same ingredients to have for the next 'lunch emergency.' good thing i did...today was the perfect day to try it out again. this time i used barley instead of bulgur and it was JUST as good...maybe even more :) and i sprinkled a few pumpkin seeds on top to give it a little crunch. i had it all ready in to-go containers when fred came home from his morning practice (along with a container of sliced kiwi and honeydew melon...his favorites!) and we were out the door and headed for a beach picnic in no time. 'jessie's sunday salad' is becoming a regular.
